oh my holy cauliflower
10:00 AMI know I've mentioned Gina's skinnytaste.com before, but have you been yet? do you go there daily? because I'm in love with her fabulous food craftiness. I joined Weight Watchers last September and fell off that wagon for a bit. (I will proudly say I hadn't gained more than a pound of the 20 I had lost prior to the holidays, with all my new found food-decision accountability during my hiatus though!) I found Gina's blog full of wonderful goodies adapted for the healthy eating back when I was looking for recipes to stay on track. she has everything from breakfast to dinner, snacks to cocktails, even baked goods and desserts, sauces and dressings. love it.
last night we tried the pasta with cauliflower and for 7p+ per hefty serving, it was fabulous.
Gina adds the Weight Watchers points (old and PointsPlus) for each of her recipes, as well as other nutritional info you can use to plug into other programs like LoseIt! I roasted the cauliflower instead of steaming and added chicken, a few capers, and roasted garlic to mine. The extra ingredients added points but worth it. the recipe is so full of flavor, and makes a great lunch the next day after all the flavors co-mingle in the fridge. the best part is my family eats it up! seconds. thirds. can't get enough. I highly recommend this recipe and fully endorse ALL of the others on her site.
