I think we've all seen the bazillion meal planning ideas on several websites, blogs. they're all over pinterest. there are tons of apps, calendars, and meal planning organizers you can purchase. (Hint hint.... I hope to have a meal planning insert for my journals in the shop soon!!) make one with sticky notes, chalk boards, dry erase boards, magnets, binders...
I've tried them all. all of them...
ok, fine... I've planned and prepared to plan and prepare my meals for, well, years. honestly, I lack the follow through in all these plans I make, but THIS year I made one resolution and that was to do what I say I'm going to do.
now, obviously, when one makes drastic changes to one's eating habits and force feeds it to her family, one may find that research and prep work are required to be successful.
I can't just run to the store and grab my usual items. I can't stash the normal mac & cheese I know my kids will eat or the sugar laden "crazy squares" they devour each morning. we can't just grab the chips and pretzels and tortillas and Bisquick or even sandwich bread like we used to. we have to try out new recipes now that most of our meals are prepared at home, and all of those meals are clean and gluten free. for the most part, eating "clean" is pretty straight forward but I'm having to work at the gluten free part. although it's becoming easier and I know it will eventually become second nature, I don't yet have all those tried and true recipes catalogued in my brain. I absolutely have to plan and prep each shopping trip, otherwise I'm stuck in a drive-thru trying to figure out "what the hell can we eat?"
since I'm off on Thursdays and Sundays, and gender roles prevail when it comes to food in this house, I do all the shopping and prepping on those days. therefore, planning for the week must be done by Wednesday. I hope to share my weekly meal plans, along with links to recipes or the recipes themselves once I'm feeling confident enough to be creative. I'll let you know what to steer clear of and what will make its way into our normal rotation once we've tried them.
Saturday: ginger and cilantro baked fish w/ corn and scallion quinoa
Monday: chicken bulgogi (kinda following this recipe, but I've made this meal many times before and tweak it a bit) w/ either brown rice or cauliflower rice
To-go** Tuesday: to be determined
Wednesday: spaghetti squash pad thai

Breakfasts will generally be: gluten free cereal with almond milk, crockpot steel cut oatmeal, or smoothies
Lunches are generally: leftovers, black bean and avocado tacos, or salad
*Sundays are the only day during the week we can all have breakfast together, and breakfast, my friends, is the bee's knees. I've been seeing these glorious stacks of delicious looking, gluten free pancakes all over Instagram and this is the perfect day to try them all out.
**I don't mean to-go as in drive-thru... Cohen has Cubscouts on Tuesdays and we barely have time to get there after work, so we'll need something quick and portable...
after I do all my shopping on thursdays, I come home and do what prep I can for the upcoming week: chop veggies for meals and portion for snacks, chop and freeze fruit for smoothies, make chicken or vegetable stock in the crockpot, make large batches of quinoa, brown rice, and steel cut oatmeal for quick meals and breakfast...
